AFTER DINNER RASPBERRY FUDGE BITES
Enjoy these rich post dinner fudge bites as part of our Valentines set menu. The best bit is that no preparation is required on the night, you could even make these a couple of days before. As they are extra fudgey, they are best served straight from the freezer (also means that they will keep for up to 3 months - not that they will last that long!). Top with desiccated coconut, or choose freeze-dried strawberry or raspberry for some extra colour.
After Dinner Raspberry Fudge Bites Recipe
Serving: Approximately 10 balls.
Ingredients
180 g dates (weight with stones removed) - if the dates are a little dry you may want to soak in boiling water for 10 minutes prior to making the bites)
1 tbsp coconut oil melted
1/2 tsp vanilla essence
1 heaped tbsp almond butter
1 tbsp cacao powder
100g fresh raspberries
100g ground almonds
50g oats
Coating: 80g dark chocolate (melted), 1 tsp coconut oil, and desiccated coconut.
Method
Place all of the ingredients, apart from the ground almonds, into a food processor and blend until it forms a sticky dough.
Decant the dough into a mixing bowl and stir in the almonds with a wooden spoon.
Roll into approximately 10 evenly sized balls (if particularly sticky you may want to pop the mixture in the fridge for 30 minutes and wash hands halfway through)
Pop the balls in the freezer for 30 minutes.
Coat the balls in melted chocolate and top with desiccated coconut.
Store and serve straight from the freezer.
Top tip: To get an even coverage, place a skewer through the centre of each ball and spoon over the melted chocolate. Keep the skewer in the balls whilst they set, balance the sticks in a weighted glass.
