APPLE BIRCHER BREAKFAST POT
These breakfast jars are a nutritious breakfast option. Make the night before to ensure you start the following day right. A delicious, healthy, and filing breakfast to either have before you settle at your WFH desk or head on your commute. Kids love it too!

Time to create: 10 minutes preparation (then leave overnight)
Ingredients
100g whole rolled oats
2 tbsp chopped hazelnuts (we toasted ours for added flavour - place on a baking tray and place under the grill for 1 minute)
2 apples (we chose Granny Smiths!) cut into matchsticks
200ml good quality (i.e. not from concentrate apple juice)
1 tbsp coconut yogurt
1 tsp cinnamon
A small dash of vanilla paste
Squeeze of lemon (stops the apple from browning)
Recipe Steps
1. Squeeze the lemon juice over the prepared apples and pop them in the bowl.
2. Add the oats and hazelnuts.
3. Stir in the vanilla essence, apple juice and yogurt until all the ingredients are coated. Add the cinnamon and stir.
4. Pop into a jar of choice. Add a few apple matchsticks and hazelnuts for a crunchy topping then pop the lid on.
5. Refrigerate overnight and enjoy the next morning.
TIP : You can use this as a base Bircher and then add any additional nuts, seeds or dried fruits. A few blackberries would be wonderful with this!
