CHAMOMILE, ALMOND AND OAT COOKIES

This recipe is super simple and requires just 4 ingredients. This recipe uses chamomile tea bags, but you could flavour the cookies with your favourite. If you’re wanting to enjoy your cookies in the evening I would opt for a naturally caffeine free tea. Pukka’s Nighttime tea would work really well here. If you like a little sweetness, you could drizzle in a little dark chocolate.

Ingredients
125g oats
30g of almonds
2 chamomile tea bags (I used Pukka Relax Teabags - made with chamomile, fennel and marshmallow root)
1 1/2 tbsp of olive oil
100ml of boiling water
Method
Preheat the oven to 180 degrees and line a baking tray with parchment paper.
Add the oats to a blender and blend to create an oat flour. Add the almonds to the blender and pulse a few times to break up the almonds into smaller pieces (this is to give the cookies texture).
Place the oat and almond mixture in a large mixing bowl. Cut open the tea bags and add the contents to the mixture. Stir until well combined.
Add the olive oil and boiling water and stir until the mixture forms a dough.
Using your hands, shape the dough into approximately 9 evenly sized balls.
Place each ball in between your hands and flatten to form round discs that are an even depth.
Put the oat cookies on the baking tray and cook for approximately 35 minutes, turning after 20 minutes.
Allow to cool before eating.
