CHOCOLATE EASTER NESTS
These Easter Nests are super simple to make, no baking required, and can be filled with your favourite treats! They're simple enough for kids to get involved and they don’t require any obscure ingredients. The perfect Easter Bank Holiday weekend activity.
Servings: Makes 8
Equipment: Cupcake tray and cases
Ingredients
60g puffed rice (we recommend Kallo Organic Wholegrain Puffed Rice)
40g desiccated coconut
2 1/2 tbsp cacao powder
60ml maple syrup
50ml coconut oil
60g smooth almond butter
Your favourite fillings (we used Rhythm 108 Truffle Eggs and Doisy & Dam Dark Chocolate Drops)
Method
Line the cupcake tray with 8 cases.
Put the coconut oil, maple syrup and almond butter into a saucepan and gently heat for a few minutes until all the coconut oil is melted and the mixture is well combined. Take off the heat and stir in the cacao powder until melted.
Place the puffed rice and desiccated coconut in a large mixing powder and give a quick mix.
Pour over the chocolate sauce and quickly mix together until all the dry mixture is coated.
Spoon the mixture into the cupcake cases. Use the back of a spoon to press the mixture together and make a small well in the centre for your treats to sit.
Place in the fridge for approximately 30 minutes to set.
Fill with your favourite treats and enjoy!
Top Tip: Before making the nests place the coconut in a dry pan and little toast for a slightly nutty flavour.
