GOJI HEART COOKIES

Alternatively invite your friends over, catch-up and enjoy these delicious oatie cookies with a warming mug of tea (we love the Pukka Love Tea). Not only do these cookies taste great, but they are also super simple to make and act as a versatile base for all your favourite toppings (see below for some of our favourites). If you can part with them, wrap them up in baking paper and add a bow. After all they do say that food is the way to the heart!

Goji Heart Cookies Recipe
Ingredients
200g rolled oats
80g ground almond
5 tbsp maple syrup
1 tsp vanilla extract
50g coconut oil (melted)
50g dark chocolate (melted + 1 tsp of coconut oil mixed together - the additional of coconut oil maximises the drizzle!)
Handful of Goji berries
Method
Preheat the oven to 200c/180c fan/gas 6.
Add the oats to a blender and pulse until it becomes a flour like consistency.
Add the almonds, maple syrup, vanilla and coconut oil. Continue to pulse until the mixture forms a dough.
Place the dough between two sheets of baking paper and roll the dough until approximately 1/2cm thick.
Use a heart shape cookie cutter (two sizes work well) to cut out the cookies and place on two lined baking trays.
Bake the cookies for 10-15 minutes, until slightly golden. Be careful not to burn the edges.
Allow to cool before before decorating with the melted chocolate and goji berries.
Other toppings could include: freeze-dried strawberries or raspberries, toasted hazelnuts, desiccated coconut, cacao nibs, edible flowers.
