LUXURY PEANUT BUTTER GRANOLA
This is one of our most requested granola recipes - it is a luxurious, indulgent, nutty, and chocolatey! This is not your everyday granola, it is a treat - serve with yogurt and fresh fruit, elevate your porridge, or add a cheeky crunch to your smoothie bowl.
Serves: Makes 1 large jar

Ingredients
120g of dates
250g of jumbo oats
50g of mixed seeds (we used pumpkin, sunflower and sesame)
40g of flaked almonds
60g of pecans
15g of cacao
60g of peanut butter
40g of rice malt syrup
20g cacao nibs
20g freeze dried banana (or banana chips)
Recipe
Preheat oven to 180C, fan setting.
Place the dates in a high-speed blender with 125g of the oats. Blend until the dates are no longer visible. Pour into a large mixing bowl.
Add the remaining dates, the seeds, almonds, pecans, and cacao and stir until well combined.
Add the peanut butter and rice malt syrup and stir together, making sure the mixture is evenly covered and there are no large clumps of peanut butter.
Spread the mixture out evenly onto a lined baking try, and place in the oven.
Bake for 25 minutes, stir every 5 minutes to ensure an even bake.
Allow the granola to cool before adding the cacao nibs and banana.
