NUTTY CLUSTERS
Looking for some last minute Christmas gift inspiration? Well look no further than Evelyn’s Nutty Clusters - they are quick to make and require just 5 ingredients! Pop in a box (we’ve reused a well know plastic box that usually contains a well know Christmas chocolate in gold foil…) or in a Kilner jar and bow and you are good to go!
Servings: 12 (enough for 2 small gift boxes)
Time to create: 30 minutes
Ingredients
75g almonds
25g pistachios
20g goji berries
125g dark chocolate
Desiccated coconut (optional)
Method
Roast the almonds in an oven at 180 C for approximately 10 minutes.
Leave the almonds to cool.
Roughly chop the almonds and pistachios in half.
Melt the dark chocolate using a Bain-marie.
Add the almonds, pistachios and goji berries to a mixing bowl and pour over the melted chocolate. Gently mix together so that the mixture is evenly coated.
Line a baking tray with parchment paper and drop spoonfuls of the mixture onto the paper, roughly creating circle shapes. Continue until all the mixture is used. Dust with coconut if desired.
Pop in the fridge for approximately 30 minutes until hardened.
Store in an air tight container.
Top tip: Spray with edible gold glitter to make them look extra fancy!
