PINA COLADA ENERGY BALLS

Pineapple, coconut and lime is the perfect summer flavour pairing! These moorish balls have just the right level of chew factor and sweetness from the pineapple. Just close your eyes, take a bite and imagine you are on a beautiful sandy beach looking out to sea…!

Not only will these balls provide you with a natural energy boost, but they are also easy to make and a great ‘grab and go’ snack option. The perfect portable snack for summer adventures. All you have to do is throw the ingredients in a food processor, blend, and roll into balls. We recommend making a batch at the beginning of the week and store in the fridge (lasts for up to 2 weeks). If you wanted to make an extra big batch they also freeze really well (lasts for up to 3 months).

Servings: Makes 8-10 balls

Ingredients

  • 60g dried pineapple

  • 30g desiccated coconut

  • 120g dates

  • 1 ½ tbsp coconut flour

  • 60g almond butter 

  • ½ tsp lime zest

  • Juice from ½ a lime

  • Optional toppings: dark chocolate, desiccated coconut and lime zest. 

Method:

  1. Place all the ingredients in a blender and blend until smooth. You should be able to squeeze the mixture between two fingers and for it to hold together.

  2. Roll the mixture into 8-10 evenly sized balls.

  3. Option to added melted dark chocolate to the top and dust in desiccated coconut and a pinch of lime zest. 

Top tips: If the dates are particularly dry soak in boiling water for 10 minutes to soften. Squeeze out the water before placing in the blender. Depending on the power/size of your blender you may need to blend in smaller batches.
