POWER-UP FLAPJACK BARS
The perfect healthy snack for the whole family
Carbohydrates are your body’s main source of energy, and therefore it is recommended that carbohydrates make up 50% of your daily calories. However how your body uses carbohydrates differs. For example refined carbohydrates (e.g. sugar and white bread) are digested rapidly, this raises your blood sugar giving you an immediate burst of energy. However, this is quickly depleted leaving you craving more! Whereas fibre-rich carbohydrates (e.g. fruits, vegetables, beans and wholegrain) take longer to break down, this means the sugar is released into your bloodstream at a slower rate providing you with a steady source of energy throughout the day.
Wholegrain oats are a great example of a fibre-rich carbohydrate, and are the main ingredient in these delicious flapjacks. The flapjacks are bound together with overripe bananas, dates and cashew butter, ensuring they are not crumbly and have the ultimate chewy texture. This is broken up the buttery crunch of the pecans!
Ingredients
2 overripe bananas (mashed)
175g oats
100g dates
100g cashew butter
30g pecans (broken into small pieces)
1/2 tsp vanilla essence
1 tsp ground cinnamon
Method
Pre-heat oven to 180c, fan setting.
Place the bananas, 100g of oats, the dates and cashew butter in a blender and blend until combined.
Place in a bowl and add the remaining ingredients.
Spoon the mixture into a lined baking tray and smooth over using a spoon.
Bake in the oven for approximately 15 minutes, until golden.
Leave to cool before cutting into bars.
Top tip: Drizzle melted dark chocolate over the top to make them extra tasty! You could replace the pecans with another nut or seeds.
