SUPER VEGGIE CHILLI

Super Veggie Chilli Recipe

Servings: 4

Ingredients

  • 500 g sweet potatoes (peeled and diced)

  • 1 tsp cayenne pepper

  • 1 tsp ground cumin

  • 1 tsp ground cinnamon

  • 3 tbsp Olive oil

  • 1 red onion (diced)

  • 2 celery stalks (diced)

  • 1 red peppers (chopped)

  • 2 carrots (diced)

  • 2 cloves of garlic

  • 1 bunch of fresh coriander (30g) - separate the stalks (dice) and leaves.

  • 2 fresh mild chillies

  • 1 x 400g tin of black beans (drained)

  • 1 x 400g tin of pinto beans (drained)

  • 2 x 400 g tins of chopped tomatoes

  • 1 lime

Method

  1. Preheat the oven to 200°C/400°F/gas 6. Place the sweet potato onto a baking tray and sprinkle with a pinch of each of the spices. Add salt and pepper to taste, and drizzle with 1 tbsp of olive oil and then toss to ensure an even coating. Roast for 45 minutes, until softened and golden.

  2. Place 2 tbsp of olive oil in a large pan over a medium heat. Add the onions, garlic, celery, carrots, and chopped pepper, stiring regularly. After 5 minutes, add the coriander stalks, chillies and spices. Cook for a further 5-10 minutes, until the vegetables have soften and are starting to caramelised.

  3. Add the beans and tins of tomatoes. Bring the chilli to the boil and then reduce to a medium-low heat. Leave for 25-30 minutes, stiring occasionally, allowing the sauce to thicken.

  4. Add the roasted sweet potato to the dish and stir through the majority of the coriander leaves.

  5. Add a squeeze of lime and sprinkle over the remaining coriander.

Top tips: This is a versatile recipe, sub in sweet potato for butternut squash, pinto and blackbeans, for kidney and chickpeas.
