APPLE + BLACKBERRY BREAKFAST PARFAIT BOWL

This recipe brings all the autumnal vibes with freshly picked apples and blackberries - plus it’s two recipes in one. A breakfast parfait bowl to enjoy straight away, and a layer pot to enjoy the following morning. Plus this recipe features a stove-top granola - a really quick way of responding to those granola cravings!
Ingredients
Fruit layer:
120g blackberries
2 apples (peeled and chopped in to approximately 1cm cubes)
1/2 tsp ground cinnamon
1/2 tbsp maple syrup
Granola layer:
60g oats
10g flaked almonds
10g mixed seeds
1/4 tsp ground cinnamon
1 tbsp smooth tahini (the runnier the better!)
1 tbsp coconut oil
1 tbsp maple syrup
Toppings:
Your choice of yogurt
Mint sprigs
Crushed pistachios
Method
Place the apple and the blackberries into a saucepan and enough boiling water to just cover the bottom of the pan. Then add the maple syrup and cinnamon before putting the lid on the pan and allowing it to simmer for approximately ten minutes. Take off the heat when the apples have softened but still kept their shape.
Whilst the fruit is simmering, place a large pan over a medium heat and add the coconut oil. Allow the oil to melt before adding the remaining ingredients. You need to constantly stir the mixture to prevent the oats from burning. After 5 minutes, reduce the heat slightly and continue stirring for a further 5 minutes. The mixture should be lightly toasted and be golden in colour.
To assemble the breakfast bowl, add a 2 tbsp of coconut yogurt (to one side) and 2-3 tbsp of the cooked fruit (to the other side). Top with the granola (down the centre), some mint sprigs and crushed pistachio for extra colour.
The remaining ingredients can be used to create a breakfast layer pot to enjoy the following day. Allow the fruit and the crumble to cool, before adding to a jar (with a lid) and layering. Once created, pop the jar in the fridge overnight and wake feeling smug that a delicious breakfast is waiting for you!
Top tips: The blackberries can be subbed for your choice of berry, the mixed seeds and flaked almonds can be subbed for your choice of seeds and nuts, and the tahini can be subbed for a smooth nut butter.
