CACAO & ALMOND PARFAIT

This month we’re all about encouraging you to explore new flavour combinations. This dessert is rich, smooth and extra smooth, all thanks to the addition of…avocado. Now you know we’re a fan of avocado on toast, in salads, as a dip but in a dessert? Are we crazy? - absolutely not. Avocados are naturally creamy, due to their high healthy fat content and have a relatively mild flavour. This pairs well with the cacao by enhancing its silkiness. Plus avocados deliver lots of nutritional benefits too, they are rich in fibre and healthy fats! Oh and this recipe is super simple to make too. Go on, we dare you to give this recipe a go!


Cacao and Almond Parfait Recipe

Servings: 4

Time to create: 15 minutes (plus 2 hours to set)

Mousse ingredients:

  • 1 ripe avocado (stoned and flesh stopped out)

  • 1 ripe banana

  • 3 tbsp coconut oil

  • 4 tbsp raw cacao powder

  • Pinch of sea salt

  • 50ml almond milk

  • 1 tsp maple syrup

  • 1/2 tsp vanilla essence

  • Optional toppings: Crushed raspberries, strawberries and cacao nibs

Base ingredients:

  • 25g almonds

  • 50g oats

  • 1 tbsp oil

  • 1.5 tbsp maple

  • 1 tbsp cacao

Cacao and Almond Parfait Method

  1. Place all the base ingredients into a food processor and pulse until a thick paste forms. Evenly distribute the base ingredients between 4 glasses and press down with the back of a spoon. Pop in the fridge whilst you make the mousse.

  2. Place all the mousse ingredients into a food processor and pulsing until smooth and creamy (you may nee to scrap down the sides to ensure there are no lumps). Take the glasses out of the fridge, and spoon the mousse into the glasses.

  3. Leave to set in the fridge for at least 2 hours.

  4. Top with fresh raspberries and cacao nibs.

Top tips: You can adjust the flavour to meet your requirements, add more cacao for a richer flavour, or more maple syrup for a sweeter flavour
