CREAMY BERRY BOOST SMOOTHIE
This creamy breakfast smoothie has a hidden ingredient…cauliflower! Now don’t get freaked out, cauliflower is very mild in taste and will make your smoothie rich and creamy. Go on, give it a try for yourself….
Add Vegetables to Your Smoothies
Smoothies are an excellent way to sneak in extra servings of veggies (perfect for kids) quickly. Next time you’re making a smoothie, experiment by adding a vegetable boost. Check out my favourite vegetables additions and top tips below (plus scroll down for this week’s recipe):
Leafy Green Vegetables: Spinach is my go-to due to it’s mild taste. You can use Kale but it has a slightly bitter taste so pair with sweet fruits to mask the bitterness. Fresh and frozen leaves work well.
Avocado (technically a fruit) - Brings a creamy texture and offers a good boost of healthy fats. Fresh or frozen chunks work well.
Cauliflower: Has a mild taste (a great sneaky addition) and provides a good fibre boost. Opt for frozen florets to maximise creaminess. Some people struggle to digest raw cauliflower, so steam cauliflower before freezing.
Sweet Potato: Bake chunks in the oven until very soft (30-40 minutes at 180 Celsius). Leave to cool and freeze in an airtight bag. They make smoothies thick and creamy
Beetroot: High in fibre - if you have a high speed blender use raw beetroot as they have higher levels of nutrients compared to cooked beetroot. Great colour - slight earthy taste
Courgette: Similar to cauliflower it has a very mild taste, good banana substitute.

Servings: 1 large smoothie

Smoothie ingredients
Frozen Cauliflower Florets - 70g
Almond milk
Frozen blueberries - 70g
Nut butter
1/2 banana
Chia seeds 1/2 tbsp
Dates
Vanilla extract
Smoothie Method
Pop the ingredients into a blender and blitz until smooth.
