CHOCOLATE ORANGE BAKED OATS

As part of our Virtual Christmas Party Retreat, our guests joined Evelyn in the kitchen to make these festive 'Chocolate Orange Baked Oats'. This dish has fluffy cake-like texture, is simple to make and requires just a handful of healthy ingredients. Kids will love this alternative brunch as it feels a little naughty, but don’t worry it will fill them with goodness! Top with orange segments and drizzled melted dark chocolate to make a centre piece for your brunch table.

Ingredients

  • 45g oats

  • 1 ripe medium banana

  • 1 egg (if you want to make it vegan replace with a flax egg*)

  • 1 tbsp maple syrup/honey

  • 1 tbsp cacao powder

  • 1 unwaxed orange

  • 1/2 tsp ground cinnamon

  • 1/2 tsp baking powder

  • A pinch of salt

  • coconut oil

  • 1 cube of dark dark chocolate

* flax egg: Mix together 1 tbsp ground flaxseed with 2.5 tbsp of water

Equipment

  • small enamel dish/ramekin dish (Evelyn's dish is approx. 12cm wide)

  • grater

  • blender

  • oven (preheated to 180C / 350F)

Method

  1. Pre-heat your oven to 180C / 350F.

  2. Add the oats, banana, egg, maple syrup, cacao powder, cinnamon baking powder, and salt to the blender. Grate the orange so you have approximately 1/4 tsp of orange zest.

  3. Blitz the mixture until you have a smooth batter.

  4. Leave the mixture to stand for 5 minutes.

  5. Grease your ramekin dish with a little coconut oil.

  6. Pour in the mixture to the dish and place in the centre of the oven for approximately 15 minutes.

  7. Melt the dark chocolate and add a pinch of grated orange zest. Drizzle over the baked oats and enjoy!
