CINNAMON APPLE TOAST WITH HOMEMADE ALMOND BUTTER

Toast doesn’t have to be boring, spice it up with this warming breakfast dish. This simple dish of toasted sourdough with caramelised cinnamon apples layered up on a bed of creamy roasted almond butter is sure to get you racing out of bed and straight to the kitchen. Make the almond butter ahead of time and pop in an airtight container before storing in the fridge for up to 2 weeks. Is homemade almond butter worth it? We think so - this recipe involves roasting the almonds first which results in a rich and creamy flavour. This recipe is also super versatile, experiment with different nuts and adding other spices (check out our suggestions below).


Cinnamon toast recipe

Time to create: Nut butter - 20 minutes, Toast - 10 minutes

Serves: Toast serves 2, makes enough nut butter for a medium jar.

Ingredients

Homemade Almond Butter (makes 1 medium sized jar):

  • 200g almonds

  • 1/2 tbsp maple syrup

  • 1/4 tsp ground cinnamon

  • 1/2 tsp vanilla essence

Almond butter flavour inspiration:

  • Try using different nuts (if using hazelnuts remove the skins after baking, allow to cool first), or a combination of nuts

  • Try adding other spices, e.g. ginger

  • Add cacao powder for chocolatey twist

Toast:

  • 4 slices of sourdough

  • 1 sweet apple (cored and cut into thin slices)

  • 2 tbsp of homemade almond butter (you can sub in shop brought almond butter if you don’t have time to make you’re own)

  • 1 tsp coconut sugar (optional) -

  • 1 tbsp maple syrup

  • 1/2 tsp ground cinnamon

  • 1/2 tsp ground ginger

  • Pinch of fine sea salt

Optional extras:

  • Toasted sunflower seeds

  • Ground cinnamon (use a sieve to add a thin dusting over the top)

Method

Almond butter:

  1. Preheat the oven to 160 C. Evenly spread the almonds across a baking tray and place in the centre of the oven for 6-8 minutes. Until they are fragrant and lightly golden. Take out of the oven and leave to cool.

  2. Once the nuts have cooled place them in a high speed blender and blend until creamy. This will take approximately 8-10 minutes. Stop at regular intervals to scrape down the sides

  3. Once the nut butter is a creamy consistency add the maple syrup, cinnamon and vanilla essence or your choice of additions. Blend for a further minute to ensure additions have combined.

  4. Decant the nut butter into a airtight jar and store in the fridge for up to 2 weeks.

Topping:

  1. Preheat the oven to 180 C.

  2. Place the slices of apples in a large mixing bowl and add in the maple syrup, spices and salt. Toss until evenly coasted and then spread evenly across the baking tray. Pop in the oven and roast he apples until tender, approximately 8-10 minutes. Place to one side and allow to cool slightly.

  3. Once the apples are out of the oven, pop the sourdough in the toaster. Once toasted spread a layer of the almond butter and layer up the slices of apple.

  4. Option to add an extra dusting of cinnamon and toasted sunflower seeds.

Top tip: The nut butter is also delicious drizzled over porridge!
