GREEN GOODNESS VEGGIE CURRY

With 5 different green vegetables, this curry is as easy way to up your green veggie intake. It has a mild curry flavour and therefore is suitable for all the family. As it contains sweet potatoes there is no need to serve with any sides, making it an easy midweek meal. It’s also freezes really well - batch cook this recipe and divide into individual portions and place in the freezer - ensuring that you always have a tasty and nutritious meal available.

Green Goodness Veggie Curry Recipe

Servings: 4

Time to create: approx. 50 minutes (with preparation time)

Ingredients

  • 1 medium sweet potato peeled and sliced into large chunks

  • 1 red onion peeled and sliced into wedges

  • 1 medium courgette sliced into coins

  • 1 medium head of broccoli cut into florets

  • 1 red pepper sliced into chunks

  • 100g green beans

  • 100g frozen peas

  • 2 large handfuls of spinach

  • 1 tbsp of olive oil

  • 2 tsp curry powder

  • 1 tsp cumin

  • 1 tsp garam masala

  • 2 cloves garlic finely diced

  • 1 knob of ginger finely diced

  • 1 tin of coconut milk

  • 1 tbsp of tomato puree

  • Salt and pepper to taste

Method

  1. Pre-heat oven 180c.

  2. Place the sweet potato, onion, spices, salt and pepper, and ½ tbsp of olive oil into a baking tray and stir the ingredients until the spices have evenly coated the vegetables. Place in the oven for 10 minutes.

  3. Take the tray out of the oven and add in the courgette, broccoli, red pepper, garlic and ginger and the remaining olive oil. Mix together and return to the oven for a further 20 minutes, stirring half-way through.

  4. Remove from the oven and add the roasted vegetables into a large pan. Place on the stove over a low heat.

  5. Add the peas, green beans, coconut milk and tomato puree to the pan, stir and bring to a simmer for 15 minutes (until the green beans have softened).

  6. Add the spinach and cook for a further 2 minutes, until the spinach has wilted.

  7. Serve and enjoy!
