Go Green to Boost your Wellbeing

This week our expert nutritionist and mindfulness coach, Louise Murray, has challenged you to go green to boost your wellbeing!!! It’s all about adding more greens to your diet.

But why are green veggies so special! - well they are one of the easiest ways to keep your mind and body healthy! Green vegetables are packed with antioxidants, and many nutrients including  vitamin A, vitamin C, fibre, folate, vitamin K, magnesium, calcium, iron, and potassium. The darker and leafier the vegetable, the greater density of nutrients.

To ensure that you obtain a wider range of nutrients it is important to diversify the types of veggies you eat. Smoothies are a great way to up your intake - therefore we have created you a super speedy green goddess smoothie containing 4 portions of green vegetables - courgette, celery, avocado and spinach!

Recipe

Time to create: 2 minutes

Servings: 1

Ingredients

  • ½ banana

  • ½ courgette (slice into discs and freeze)

  • 1 stick of celery

  • ¼ avocado

  • 1 handful of spinach

  • 100ml almond milk

  • ½ tbsp almond butter

Method

1.      Simply place all the ingredients into blender.

2.      Blitz until smooth and creamy

Top tip: Try adding a knob of grated ginger (for a little kick), 1 tsp cacao (for a magnesium boost), or a handful of berries (for extra goodness)
