HEARTY QUINOA STEW

A hearty one pot colourful dish topped with avocado, crumbled tortilla chips and a squeeze of lime.

This simple dish looks great in the centre of the table. Allow your guests to help themselves and enjoy with a fresh salad.

Ingredients

  • 1 Onion, diced

  • 2 Carrots, diced

  • 2 Celery stalks, diced

  • 1 400g Tin of Black Beans

  • 600ml Vegetable stock

  • 1 400g Tin of Chopped Tomatoes

  • 2 tsp Smoked paprika

  • 1 tsp Cumin

  • 1 tsp Chilli powder

  • 1 tsp Thyme

  • 3 garlic cloves

  • 150g quinoa (uncooked)

  • Toppings (optional): chopped avocado, crumbled tortilla crisps, fresh coriander, wedges of lime, swirl of coconut yogurt, spring onions

Method

  1. Heat the olive oil in a large pan over a medium heat before adding the onion, garlic, carrot and celery. Sauté for approximately 8 minutes.

  2. Add the spices and tomato puree and fry for a further 30 seconds before adding the stock, tinned tomatoes and black beans.

  3. Stir in the quinoa and bring to a medium simmer for approximately 15 minutes, until the quinoa is tender.

  4. Decant between 4 dishes. Add a fresh squeeze of lime over each serving.

  5. Add your choice of toppings.
