Mince pie topping ingredients

Serves 6

  • 2 apples (keep the skin on - dice 1 apple into cubes, and grate the 2nd apple)

  • The juice from 1 large orange

  • 1 tsp grated orange zest

  • 60g raisins

  • 40g cranberries

  • 4 dates (destoned and diced)

  • 1 tsp ground ginger

  • 1 tsp cinnamon

  • 1/2 tsp nutmeg

Method

  1. Place all of the ingredients into a pan over a medium heat and cook for 40-45 minutes until soft and all comes together. You may have to add a splash of water every now and again and stir to prevent it sticking to the bottom and drying out.

  2. Leave to cool. This can either be served cold or warmed on top of the overnight oats (see below).
