MINCE PIE OVERNIGHT OATS
This beautiful mince pie overnight oat recipe is aromatic and perfect for the wintery days leading up to Christmas. Top these pots with the festive granola and serve with a side of our festive gingerbread bites for the perfect festive brunch. The mince pie mix is also perfect warmed served over porridge.
What’s great about this recipe is that it can all be prepared the night before - it’s stress free, looks great, and tastes amazing!!!
Mince pie topping ingredients
Serves 6
2 apples (keep the skin on - dice 1 apple into cubes, and grate the 2nd apple)
The juice from 1 large orange
1 tsp grated orange zest
60g raisins
40g cranberries
4 dates (destoned and diced)
1 tsp ground ginger
1 tsp cinnamon
1/2 tsp nutmeg
Method
Place all of the ingredients into a pan over a medium heat and cook for 40-45 minutes until soft and all comes together. You may have to add a splash of water every now and again and stir to prevent it sticking to the bottom and drying out.
Leave to cool. This can either be served cold or warmed on top of the overnight oats (see below).
Overnight oats ingredients
Serves 1
40g oats
20g ground almonds
10g almond butter
100ml almond milk
1 tbsp of chia seeds
½ tsp cinnamon
Method
Place all the ingredients in a bowl and mix well until everything comes together. Decant into an air tight jar and place in the fridge overnight.
Take out of the fridge and top with coconut yogurt, the mince pie topping, and a sprinkling of festive jewelled granola. Serve with a festive gingerbread bite for the perfect festive brunch.
