PINEAPPLE + COCONUT SMOOTHIE ICE LOLLIES

Feeling the heat? We recommend making these refreshing, tropical, island vibe smoothie ice lollies. Blitz up at batch and pop in the freezer, helping you and the family stay cool during the heat wave.

Servings: 8

Time to create: 10 minutes (plus freezing time)

Ingredients

  • 160g frozen banana

  • 200g frozen pineapple

  • 300ml coconut milk

  • Zest of 1 lime

  • 4 tbsp of coconut yogurt

  • 2 squares of dark chocolate

Method

  1. Pop the ingredients (minus the dark chocolate) in a blender and blitz until smooth.

  2. Pour into lolly moulds, being mindful not to overfill and place in the freezer for 6 hours (ideally overnight).

  3. Before serving melt the dark chocolate. Carefully take the lollies out of the moulds and drizzle in the dark chocolate (you could go for the dipping approach and sprinkle with desiccated coconut).

  4. Find a shady spot, sit back and enjoy!
