Strawberries + Cream Energy Balls

Looking for something a little different to fuel those adventures? Look no further than Evelyn’s ‘Strawberry + Cream Energy Balls’. Combining classic English summer flavours, these no-bake, bite-sized, delicious balls will soon become your snack of choice. Blitz up a batch and store them in the fridge, ready to go when adventure calls.

The star ingredient in these balls is the freeze-dried strawberries. Resulting in an intense strawberry flavour which is nicely paired with the subtle flavour and the creaminess of the cashews.

These balls were taste tested by the B+G team last weekend and its safe to say they were a huge success (I mean the things we get our team to do!)

Recipe

Servings: 12 balls

Time to create: 10-15 minutes (depends on fast you are at rolling!) 

Ingredients 

  • 200g dates 

  • 40g oats

  • 50g cashews

  • 50g smooth cashew or almond butter 

  • 20g desiccated coconut

  • 10g freeze-dried strawberries

  • 1/2 tsp vanilla essence

  • 1 tsp maple syrup

  • Optional toppings: melted dark chocolate, extra freeze-dried strawberries and coconut

Method

  1. Place the cashews in a blender and pulse until broken up into smaller pieces (you still want some texture, rather than a fine powder).

  2. Add the dates, oats, nut butter, coconut, 5g of the strawberries, vanilla and maple syrup. Blitz until the mixture comes together. Test the consistency by squeezing the mixture between your thumb and forefinger, if it holds together then its done. 

  3. Roll the mixture into 12 evenly sized balls (approximately 30g each).

  4. If decorating place in the fridge for 30 minutes, before drizzling in melted dark chocolate and topping with strawberry and coconut. 

  5. Store in the fridge for up to 2 weeks in an airtight container (its unlikely that they will last this long!) or in the freezer for up to 3 months. 

Top Tip: Evelyn recommends buying a larger bag of freeze-dried strawberries online. They often only sell very small quantities in summer markets for a high price. Use leftovers to top pancakes, smoothie bowls, and sprinkle over porridge.
