STUFFED MEDJOOL DATES

Want a healthy snack, that requires no baking, is made of just 5 ingredients, and looks great too? These delicious morsels are the answer. Made with medjool dates for a rich caramel-like flavour and stuffed with creamy almond butter (I recommend Deliciously Ella’s Almond Butter with Ginger), pistachio for a satisfying crunch and fresh raspberries for some added sweetness. These are a great cake alternative for the office with just one stuffed date providing you with the satisfaction that you need.  Plus you can get creative with lots of different flavour combinations, check-out my recommendations below.


Stuffed Medjool Dates Recipe

Time to create: 10 minutes plus cooling time
Servings: 12 dates

Ingredients

  • 12 Medjool dates

  • 6 tsp Almond butter

  • 6 Raspberries (halved)

  • 20g Pistachios (weight without shells) crushed - plus extra crushed for decoration

  • 20g Dark chocolate

Method

  1. Carefully slice each date lengthwise without cutting all the way through and remove the pit.

  2. Distribute 1/2 tsp of almond butter in the centre of each date. Add a sprinkle of crushed pistachios and half a raspberry per date.

  3. Place the dates in the fridge, for at least 30 minutes to cool.

  4. Melt the dark chocolate. Take the dates out of the fridge and coat each end in dark chocolate, top with crushed pistachios.

  5. Store in the fridge.

Other flavour combinations:

  • Peanut butter and dark chocolate (mix in cacao for a more intense chocolate flavour)

  • Almond butter, desiccated coconut and lemon zest

  • Dried cranberries and cacao nibs

Top tip: Place a cocktail stick through the centre of the each date. Hold on to the stick when drizzling in dark chocolate.
