BREAKFAST RECIPE : BLUEBERRY BAKED OATS
Swap your regular porridge for this healthy baked version. This super simple recipe is packed with oats, juicy blueberries and crunchy nuts making it a nutritious and easy way to start your day. A warming breakfast for the whole family, it almost tastes like a naughty dessert - meaning kids are also likely to love it too.
Oats are are rich in fibre, which promotes fullness, eases the insulin response, and benefits gut health. It's also a source of vitamins B and E, and minerals such as magnesium. The blueberries add 1 of your 5 a day and contain disease-fighting antioxidants giving you an awesome boost to start your day.
INGREDIENTS:
500ml Oat Milk
200g Jumbo Porridge Oats
2 tbsp Almond Butter
1 tsp Baking Powder
1 Egg , beaten
1 Small Ripe Banana , mashed
1 tsp Vanilla Extract
300g Blueberries
Roughly Chopped Nuts (I used pistachios plus Two Birds Superseed mix)
METHOD:
Heat the oven to 200C/180C fan/gas 6. Mix all of the ingredients together in a large bowl.
Tip the mixture into a 2-litre ovenproof dish, then bake for 30-35 mins until piping hot in the middle. Serve warm with a little milk or yogurt, honey and extra blueberries!
