This week I was lucky enough to sit down with our Cornwall Retreat (20-23rd May) Chef, Kate Munro-Boot. I have to be honest, I’ve been drooling over Kate’s food on Instagram (@themindfulchefette) for a while now (I don’t recommend looking if you are hungry) and was super excited to catch-up and share recipe ideas for our upcoming Cornish retreat (there are still a few spots remaining - scroll down for all the info). 

How did Kate get to Cabilla?

Kate is a professional chef, who started her career cooking for the rich and famous on super yachts. Through personal experiences, Kate’s food philosophy has developed to focus on nurturing the body. As a well as a professional chef, Kate is also a qualified Human Potential life coach, yoga teacher, massage therapist and reiki healer. Kate is an advocate of nature and for healthy living. If she’s not in the kitchen, you may find her taking a cold water dip, surfing, climbing mountains, and/or dancing! Sounds like she is going to fit right in with the B+G team!

You can expect colourful, playful plates, designed to inspire and nourish the body. Vegetables are the star of Kate’s dishes, and as much as possible they are sourced from the local area and foraged from the natural environment. Through Kate dishes, she curates opportunities for guests to come together - a chance to create community, connection and encourage interaction. 

Now for the important stuff - Brunch

Now you know that the B+G team are big fans of brunch…so I was intrigued to see Kate might suggest: 

Guests will start their first full day with a Morning Meditation and Vinyasa Yoga*. This will be followed by a brunch buffet (I mean I love hearing those words together!), consisting of: 

  • Superfood Porridge

  • Warm Banana Bread with a Fresh Berry Compote

  • Fresh Fruit Platter

  • Homemade Yogurt and Granola

It was at this point that I had no doubt that Kate was the perfect chef for us! 

*Do not worry if you are someone that likes to eat first thing, there will be granola and yogurt available to help yourself pre-session! 

Quick Fire Round

Having discussed the weekend retreat plans and menus, I asked Kate for 5 minutes of her time for a quick fire round of questions.

Favourite Dish to Cook: I don’t have a favourite one, it’s very intuitive. If it’s sunny I love fresh green salads, super nutritious. If it’s cold I love a wintery, hot-pot stew. 

Favourite spot in Cabilla: I love the walk through the koyts into the woods, honestly when you arrive you'll be blown away. And the bathing pools, the combination of the ancient forest and taking a dip in the fresh water is such a magical experience.

What can guests expect from your cooking: High vibe vegetables, a lot of colour, a lot of texture, a lot of flavour. I just love to transfer lots of happy feelings into the food. That’s my intention - that people feel happy, loved and connect from eating my dishes. 

Favourite unique flavour combination: I love fusioning cultured flavours. You’ll experience lots of different spices, textures and flavours - Eastern, Asian, and Indian inspired - combined with some home mamma cooking! 

How do you feel about using food as a tool for connection: That’s what it is for a me - what I do is such a gift. That I can be part of people’s community experience. The act of coming together to dine, is such a beautiful experience for people to connect, to feel empathetically joined together. There is always this beautiful thing that when we come together and we share food and share love, the ripple effect of that is so far reaching.
