Goji Heart Cookies Recipe

Servings: Approximately 15 medium cookies

Time to create: 40 minutes

Ingredients

  • 200g rolled oats

  • 80g ground almond

  • 5 tbsp maple syrup

  • 1 tsp vanilla extract

  • 50g coconut oil (melted)

  • 50g dark chocolate (melted + 1 tsp of coconut oil mixed together - the additional of coconut oil maximises the drizzle!)

  • Handful of Goji berries

Method

  1. Preheat the oven to 200c/180c fan/gas 6.

  2. Add the oats to a blender and pulse until it becomes a flour like consistency.

  3. Add the almonds, maple syrup, vanilla and coconut oil. Continue to pulse until the mixture forms a dough.

  4. Place the dough between two sheets of baking paper and roll the dough until approximately 1/2cm thick.

  5. Use a heart shape cookie cutter (two sizes work well) to cut out the cookies and place on two lined baking trays.

  6. Bake the cookies for 10-15 minutes, until slightly golden. Be careful not to burn the edges.

  7. Allow to cool before before decorating with the melted chocolate and goji berries.

Other toppings could include: freeze-dried strawberries or raspberries, toasted hazelnuts, desiccated coconut, cacao nibs, edible flowers.
