CARROT CAKE ENERGY BALLS

CARROT CAKE ENERGY BALLS RECIPE

These bite-sized treats are packed with wholesome ingredients, along with refreshing hints of orange zest and juice. A dash of cinnamon and a splash of vanilla extract add warmth and depth to these energy balls. Simply blend all the ingredients together, roll them into small balls, and coat them in desiccated coconut. These energy balls are perfect for on-the-go snacking or as a post-workout boost.

Servings: approximately 20 balls

Time to create: <20 minutes

Ingredients

  • 125g sunflower seeds

  • 125g almonds

  • 125g sultanas/raisins

  • 125g dates

  •  2 medium carrots, peeled, chopped into chunks

  • 2 oranges, zested and juiced

  • 1 tsp ground cinnamon

  • Splash of vanilla extract

  • 50g dessicated coconut

Method

  1. If your dates are hard, soak them in a bowl of hot water for 15 mins so they will blend more easily.

  2. Meanwhile add the sunflower seeds and almonds to a food processor and process to small pieces followed by the carrot chunks, blending again until the carrots are chopped very fine.

  3. Drain the dates, roughly chop them and add them to the food processor with the sultanas/raisins, the orange zest, juice, cinnamon and vanilla. Blend until everything is finely chopped and the mixture sticks together, check by squeezing between your fingers. Add a little more moisture if needed, a splash of water or more orange juice.

  4. Form into ping ping sized balls and finish by rolling in dessicated coconut.
