CHICKPEA AVOCADO TOAST
This April Lou, our in-house Health Coach and Mindfulness Teacher, brings you her ‘Chickpea Avocado Toast’. Lou explains how this breakfast provides the perfect balance of healthy fats, protein and fibre. We happily tested the recipe and can confirm that it tastes as good as it looks! It’s provides a great alternative brunch option - why don’t you invite a few friends round and treat them to this in the garden!
The perfect brekkie needs to include a combo of healthy fats, protein and fibre….this trio is essential to help prevent blood sugar imbalances, which can cause irritability, fatigue, low energy brain fog and low mood. Failing to eat breakfast can also cause your brain to produce excess cortisol, making you feel more stressed and anxious. SO set yourself up to be the best version of yourself by making sure you get heathy fats, protein and fibre onto your plate each morning!
This delicious recipe ticks all three boxes so will set you up for good blood-sugar balance, good hormone balance and therefore support great energy levels and mood. Yay!

Time to create: 15 minutes
Ingredients
½ cup (120g) chickpeas, cooked
½ tsp. paprika powder
1 medium avocado
¼ tsp. lemon juice
4 slices sprouted grain bread
pinch of cayenne pepper
salt and pepper
Method
Preheat the oven to 400°F (200°C).
Drain and rinse your chickpeas. Pat dry.
Add the chickpeas to a bowl with the paprika, salt, and cayenne pepper. Mix well to combine and pour onto a baking tray lined with baking parchment.
Place the tray into the oven for 8-10 minutes until the chickpeas start to crisp.
Take the avocado and slice it in half. Remove the stone and scoop out the flesh into a bowl. Mash with a fork and add in the lemon juice and season to taste with salt and pepper.
Toast the bread in the toaster. Take the avocado mixture and spread onto the toast. Top with the chickpea mixture.
Serve hot. Enjoy!
